Ingredients · 16 oz

frozen pineapple8 oz

low-fat cottage cheese (heaping)1 tbsp

unsweetened coconut milk (carton, not canned), to fill line1½ cups

Steps

1. Blend the frozen pineapple with the cottage cheese.

2. Scrape into a pint and top up with coconut milk to just under the fill line (it expands).

3. Freeze 24h, spin on Lite Ice Cream, then Re-spin. Sweeten to taste if you like.
